1 medium sweet potato – a little less than one pound, grated raw
1/2 cup finely chopped scallions
1/4 cup chopped cilantro
1/3 cup flour, a type that is appropriate for you
1/2 tsp curry powder
1 tsp salt
1/2 tsp pepper
2 eggs, lightly beaten
Mix sweet potato, scallions and cilantro in a bowl.
In a separate bowl, whisk flour and seasonings; then add to the sweet potatoes.
Add eggs and mix well.
Heat oil in pan.
Drop 2 Tbl size blobs into pan and flatten.
Cook until lightly browned, about 2 minutes per side.
