Festive Fresh Broccoli Salad

12 oz (about 2 heads) fresh broccoli florets, chopped into bite size pieces

(you can peel and grate the broccoli stems if desired or simply omit them)

1/2 cup grated carrot

1/4 cup chopped red onion

1/3 – 1/2 cup fresh pomegranate seeds or dried cranberries or use both

1/3 cup raw or toasted pecans or tamari almonds


¼ cup extra virgin olive oil

2 Tbl apple cider vinegar

1 Tbl raw honey

2 Tbl Dijon mustard

Mix salad ingredients and toss with dressing.  Enjoy!
