Thanksgiving Recipes from Quantum Techniques

Honey Pumpkin Pie

2 cups pumpkin

1 ½ tsp cinnamon 1 cup alternative milk (hemp is good)

1 tsp ginger

2 eggs

1/4 tsp cloves or allspice

¼ cup honey

½ tsp salt

2 Tbl molasses (optional – substitute 1 tsp honey)

Mix all until well blended. Adjust sweetening to taste. Pour into prepared pie crust. Bake 450* for 10 minutes (on lowest shelf) then 400* for 30 more minutes


Wild Rice and Cranberry Stuffing

1 cup wild rice

2 cups brown rice

1 cup walnuts or toasted chestnuts

¼ cup chopped parsley 6 cups water or vegetable broth

2 Tbl poultry seasoning 3 Tbl butter or olive oil

1 Tbl minced garlic

½ lb chopped fresh mushrooms

1 tsp black pepper 1 medium onion, minced

1 Tbl sea salt

1 cup celery, finely chopped

½ lb fresh cranberries

Cook wild rice in 2 cups stock 25 minutes. Cook brown rice in 4 cups stock 40-50 minutes. Meanwhile sauté onions, celery, garlic and nuts.  Mix together and add seasonings and cranberries.

Stuff loosely inside turkey just prior to baking. As an alternative, bake in a casserole dish or stuff into a pumpkin or squash.


Fresh Honey / Cranberry Sauce

In saucepan cook 1 bag fresh cranberries and 2 Tbl honey over low heat (no fluid required). Stir frequently.  When cranberries are soft and blended, adjust honey to taste, tart or sweeter.
